For dairy, as long as you're usually choosing plain, unsweetened dairy products like regular milk, plain yogurt, cottage cheese, etc. the naturally occurring sugar (lactose) is not a concern.

Eggs. One egg has about 70 calories and is extremely high in all kinds of nutrients. Try making egg omelettes made of two eggs and about half a cup of vegetables (tomatoes, eggplant, spinach... more if it's spinach), whatever you like.
Vegetables in Mexico are probably quite cheap, I imagine. I mean... it's Mexico.
And potatoes, baked. NOT fried. They're quite good for you, actually and full of nutrients too.
Just avoid pop and juice (high in glucides). Trust me, most juice is not healthy.
And avoid ultra fatty foods. And processed foods. And foods that are ultra sweet.
Drink tea. With NO honey or sugar! Just good ol' tea and water.
